I am helping a friend make dinner for x-mas. It's her first prime rib roast and she doesn't want to screw it up.

Just in case some of you are trying something for the first time for the holidays, I say cheers to you! Take those brave steps
and pursue the unknown!

For a slab of prime rib the size to feed about 12 people (with some awesome leftovers)the most important thing to remember is to keep it simple. Buy good meat and keep the cooking simple. 15 pounds or 6.80 Kilograms.

Pre-heat oven (less temp for convection ovens) to 275°F (135°C) You are going to Broil it, not bake it.

Like to rub your meat? You're gonna LOVE this!!!
Mix salt, black & white pepper, granulated garlic and powderded onion (equal parts 'cept more salt)
DO NOT CUT ANY FAT OFF OF THE MEAT! It is a big part of the whole party!
Rub in your seasoning mix and do it like you mean it!

In the bottom of the pan, you are going to be making your au jus sauce.
Don't even bother to peel the red onions, just chop 'em and put 'em in the pan. 1 or 2 small ones will work.
Now put in some freash rosemary, some bay leaves, whole garlic, a pinch of paparika and cover it with foil and shove it in the oven for about an hour. Check the temp with a proper meat thermometer in the CENTER of the meat. If it is up to about 90°F
(32.2°C), take off the foil and broil that sucker and keep checking the temp every 10 minutes until the very core is up to 130°F (54.4°C). That is a nice rare with a crusty outside. The ends will be on the well done side, but some people like that.

Don't forget your au jus! You have to strain the pan drippings into a pot and add a little red wine and reduce it over a low heat for about 20 minutes.

I really suggest some fresh horseradish sauce to serve it with. It's going to melt in your mouth no matter what, though.

Yes, this white boy, born in D.C. and has been in south Florida since 1987-ish, is having a trip.
Mexico was very good

but this is something special. I am meeting people (who have already captured my heart) for the first time ever! You would think that I was a bit nervous but I am very excited! I can hardly wait to actuall have a true family again!

I don't mean to bring you all down, I just want you to know how amazing this is to me. I have been without my family for 10 years now. My moms passing made me the last one. Not even my birthday has been a big deal since.
But NOW things are different!
Somehow, the most beautiful woman I have ever set eyes on fell in love with me. It's like winning the lotto and getting struck by lightning at the same time in the same place...twice. That's about as close as I can explain it with words. It is still very weak. Words telling my feelings, lately have been pretty hard to find (and I know a lot of words!).



You are still my "gift"!

It will be our first year together! One down, the rest of them to go! (and I mean ALL of them!) Peas and carrots!!

We are back home now and have brought some pretty cool shots and memories with us. We stayed in a beautiful hotel where the service was amazing and the view was to die for. We took one day and had a trip to Chichen Itza (Chicken Pizza). Our tour guide was fantastic, passionate and informative. The city ruins were amazing and I am very lucky to have expirenced the whole journey. I'll be posting more photos soon and fill you in on our expedition in details later.

This was a wonderful week until it ended much too soon. Only a week. I won't dwell on my misery, but I will brag about my happiness!!! Or, at least, act like i'm happy. The new countdown to Milan will begin and I will mention it in another journal.

My subscription is out this week and there will be no cool features. It won't be long though, I have to work many hours to keep my mind focused. My true love awaits!

April is finally here and I am counting down the days until I can finally be with the woman of my dreams.
Things are going well for me and the future is looking bright. Cash flow is a bit bleak right now and I can't even buy new batteries for my camera. I actually had to take them out of my camera to use in my mouse. Computer mouse. I don't stick batteries up...never mind.

It's just about warm enough to jump in the pool again. Soon it will be hurricane season and you can set your watch by the thunder storms here. You can expect more photos from me by the end of the month. Thanks for your continued support of my crap and stuff.

"Christmas, Thanksgiving, Birthday" thing was a big deal when I was
a wee lad and it was very important to my family and my mother.
Now that they are all gone and as I work in the bar/restaurant business,
it's not such a big deal to me anymore. It's just another day 'cept seasonal.
Maybe I have been "in the biz" for too long.

That brings me to another subject....
I am going to yell at you (who don't know shit about service) and tell you...no, DEMAND
that you TIP TIP TIP TIP TIP!!!!!

If someone takes care of your kids, pets, house, mail, food, drinks....TIP THEM!!!!!
...and for those of you who have never worked in a bar or restaurant and don't know...
it is a $3.74 an hour job. They live on tips. The rest is taxes. 15% is "normal" but 20% is only medium. Tip at LEAST 25% of your bill. It doesn't hurt at all to throw the cook a $5 either.

Damn! I promised myself I wouldn't rant.

Well, it's been quite a month. A quick month. A quick YEAR, for that matter.
When I was a kid, I remember a year lasting FOREVER! What happened?
Now it shoots by like you-know-what(shit)through a goose...but I digest...

There are so many wonderful artists out there and the artwork dumfounds me every day.
Just being a part of this community makes me proud.

I only have two goals as a part of this gang; helping out with showing off your work (and mine )

and making as many people laugh and/or smile as possible...

and learn to be a better photographer...THREE! THREE goals!
